BACON WRAPPED MEATLOAF STUFFED WITH CHEESE

Meatloaf this is made different then I’m use to looks good thanks
1 lb ground beef
1 lb ground sausage
Italian bread crumbs about a half cup
seasonings (I use McCormicks Greek Seasoning)
salt and pepper
1 lb bacon
cheese ( I vary between feta and cheddar)
Sweet Baby Rays BBQ sauce
Mix all ingredients up to the bacon and cheese.
Form a loaf using 2/3 of mixture. Key I learned some years ago…don’t use a loaf pan…use a 9 x 13.
Here you choose a type of cheese to place on top of the loaf, as much as you like…if I go with shredded cheese its usually 1 cup shredded. If I go with feta its 2 small blocks or 1 large block of cheddar
Take remaining mixture and carefully spread on top and seal shut.
pour on some Sweet Baby Rays BBQ, spread over loaf.
Now take bacon and lay strips across the top. Once you have them all on, start at one end, work your way down, and tuck the bacon under the loaf.
Bake 45 minutes or more, we like it more medium rare to medium. 50-55 is more medium. Ovens vary too…you’ll have to try a couple of times. No worries…no one will mind.
